I've been reading Ansel Adams's 3 books, which really (as far as I can tell) should be considered the gold standard in photography books:
1 - The Camera
2 - The Negative
3 - The Print
These books, are excellent. They focus on photographic techniques, relationships, and all the important things. They're not about specific types of hardware, lenses, or anything else.
There are sections that don't really apply, but the vast majority of material is just as applicable to today's digital cameras as it was to stuff produced 1900-2000.
They focus on composition, lighting, exposure, and the rest.
I picked up the set at a local Used Book store pretty cheaply, and would highly recommend them.
