I wouldn't over emphasize the plastic vs. metal issue. There's nothing wrong with "plastic" - many of Canon's finest lenses are made with plastic. In actual practice the XT is a sturdy camera, and in my experience no less sturdy than the 20D. The 20D, however suffers from a poorly designed battery grip which can lead to temporary power loss and subsequent loss of photos - whereas the XT's grip is very well designed and a more natural fit for most human hands.
